This is a super simple recipe for #cooklikeyoucode suggested by my other half. The picture above is the actual dish (bread made in a Panasonic bread maker).
Equipment
For this recipe you are going to need a hand blender or liquidizer.
Ingredients
- Leftover (roasted, boiled or steamed) vegetables (e.g. potatoes, carrots, cauliflower, parsnips)
- Vegetable stock cube
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- salt and pepper to season
Method
- To make soup for two or three people you'll need a couple of handfuls of leftover veg and a pint of vegetable stock made with boiling water.
- Put ingredients into a pan and blitz with the hand blender, being careful not to make the soup too smooth or turn it into the consistency of baby food. (If you are using a liquidizer put the ingredients in there first then transfer to pan.)
- Heat gently for 5 or 10 minutes. Serve hot.
Hope you enjoyed the second #cooklikeyoucode recipe. If you did then like it, tweet it, +1 and comment.
