#cooklikeyoucode: soup using leftover vegetables


This is a super simple recipe for #cooklikeyoucode suggested by my other half. The picture above is the actual dish (bread made in a Panasonic bread maker).

Equipment

For this recipe you are going to need a hand blender or liquidizer.

Ingredients

  • Leftover (roasted, boiled or steamed) vegetables (e.g. potatoes, carrots, cauliflower, parsnips)
  • Vegetable stock cube
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • salt and pepper to season

Method

  1. To make soup for two or three people you'll need a couple of handfuls of leftover veg and a pint of vegetable stock made with boiling water.
  2. Put ingredients into a pan and blitz with the hand blender, being careful not to make the soup too smooth or turn it into the consistency of baby food. (If you are using a liquidizer put the ingredients in there first then transfer to pan.)
  3. Heat gently for 5 or 10 minutes. Serve hot.
